This is 7-8 shots with a 10mm lens stitched together. The lens gives you such a wide field of view that you don't need any more, but the disadvantage is low resolution and it's more prone to stitch badly together. Fewer stitches means less places to find errors though

Did you do this with a 360-camera, or shot by shot? If so, how did you make it so that no people were cut in two, and that the water in the fountain looks like it was done in one shot?

Yes. Structured pano with ICE. It has some issues with large amounts of images if you load them in standard pano, but with a perfectly spaced grid of images in structured mode it can do wonders
